Wild asparagus

The wild asparagus, belonging to the Liliacee family, is a very widespread plant, which also grows spontaneously along sea coasts or the banks of rivers. Its cultivation is aimed at the use of "shoots", ie the suckers of the plant that they are born and develop starting from the underground part, consisting of several legs from which cultivation begins. The wild asparagus maintains the characteristics of a very rustic plant, capable of growing easily in different climates, but nevertheless a lover of those areas with a temperate climate that can mostly boast a warm temperature since spring and a considerable sunny exposure during the day. . The aforementioned shoots will be harvested between May and June. If, on the contrary, they are allowed to grow, they will give life to a plant with a particular bushy shape, with harder and more branched stems and small greener branches called “cladodes”.

Left to grow in this way, the plant will be able to give additional seeds that can be collected and used for a new cultivation, drawing them from those branches grown from shoots and limiting their use of those contained within the larger berries. These berries can be pulped in water and the seeds obtained must be dried in the shade and sown in March.


Ground

The preferred soil for wild asparagus is loose and sandy, cool but not excessively wet, nor too calcareous. It is also important that the soil has a good supply of calcium and that it is devoid of stones and gravel. These presences in fact prevent an optimal development of the shoots. The plant is not particularly afraid of intense cold, although, however, it can suffer damage caused by frosts.


Fertilization

Wild asparagus does not need large quantities of manure or particularly fertile soil to grow well. Approximately three quintals of mature manure or compost per 100 square meters of cultivation will ensure good plant growth. But it will be useful, as mentioned, to enrich the soil with calcium, since the plant is very demanding of it. For example, a useful element could be wood ash, characterized by a considerable wealth of calcium, whose use requires it to be buried and not distributed along the surface of the ground. In this case its presence could cause damage, in particular to those soils rich in clay.


Rotations, associations

It is always advisable to wait a long period of time between the cultivation of wild asparagus and the next: even 8 years between one practice and another. Furthermore, in order to avoid harmful rhizoctomy problems, it is useful to anticipate the cultivation of asparagus with one of leeks. Instead, favorable associations with the wild asparagus plant, to be associated in the first two years of growth, are lettuce, parsley, tomato and cucumber crops.


Cultivation

The plant for the cultivation of asparagus, for the composition of a typical asparagus seed, starts from the "legs", obtained from the seed, to be used approximately 20 months after their harvest. As regards the planting plant placed in the open field, trenches will be dug 40 centimeters deep, about one meter wide, spaced at least half a meter apart. At the bottom of these trenches, a good quantity of superphosphate, at least 70 grams, about 25 grams of ammonium sulphate and another 25 grams of potassium chloride, will be placed every square meter. Subsequently, those paler legs rich in roots will be planted, positioned at a distance of about half a meter to be covered with a little soil and 30 centimeters of mature manure. In the two years that follow, the asparagus will still be unproductive, but in this period the treatments will continue: it will in fact be necessary to follow the plant defending it from unwelcome arrivals of weeds and also intervene with appropriate enrichments of mineral fertilizer, to be precise still about 20 grams of ammonium sulphate, an equal amount of potassium chloride and another 60 grams of superphosphate. At the end of the winter season, for all subsequent years, the cultivation will be enriched with mature manure and sandy soil in order to improve the quality of the shoots.


Pruning

It is advisable to do a pruning operation during the autumn season. At this time of the year it will be good to intervene by cutting any stem that has developed out of the earth during the summer season. The visibly dry stems must also be removed, at least for 4 or 5 years after the start of cultivation, always during the autumn season.


Collection

The final collection of the shoots will be done with special tools called gouges, a type of knives, with which it will be easier to remove the edible part of the plants leaving the legs completely intact.

So you may read this and, like my husband, wonder what would possess someone to roam ditches and pastures for asparagus when you can find locally grown spears in all the stores. Fair enough. But try it and you will understand! It’s not always just about taste. Sure, wild food usually tastes better, but there is also the exhilaration that comes when you are foraging 'in the wild'! I'm not beating my hands on my chest or anything, but hey, it's fun, what can I say.

We did this all the time as kids with my mom, even though friends of ours had an asparagus farm! It’s almost the beginning of April and it’s this time of year that I find myself looking out the car window whenever we are out driving for the tell-tale signs of asparagus. A tall spear that has been left and now looks like a skinny little tree. If you see these, there are sure to be asparagus growing around it very soon. Of course, the old pros will often cut these down so their location is not easily found by newcomers' but a keen eye and a light foot will help you find them.

That means getting out and walking slowly and gently while delicately moving the long grass and weeds aside to get a glimpse of the spears that have camouflaged themselves!

Much like hunting for mushrooms, there are 'secret' spots that are seldomly shared in fear of someone beating you to the pickings. On a drive with Anna's parents to find some wild asparagus, we were guided to their favorite spots - luckily without being blindfolded! We all turned into little kids as soon as the first one was spotted!

So just a few pointers before you run out foraging. Boots and long pants is a good idea, and please, please know what poison ivy looks like. I had an unpleasant experience with this myself and it is not fun! A knife is handy for making clean cuts and a grocery bag or basket to hold your harvest will be needed as well. You may occasionally find some right at the roadside where the grass meets the shoulder. I wouldn't pick these ones for eating though. Choose areas that are away from traffic to avoid pollution and choose pesticide free picking areas.

Pickled Asparagus
A great way to preserve asparagus. Easy to make and a delicious addition to any antipasto plate.
Prep Time: 45 Total Time: 45

Ingredients
● 3 pounds fresh asparagus
● 6 cups white vinegar
● 1/2 cup pickling salt
● 2 cups olive oil
● 1 oregano tablespoon
● 3 cloves of minced garlic

Instructions
1. Trim off the bottom tough parts of the asparagus. You will know when it gets tender because your knife won’t feel any resistance and you can tell by color. Green is tender, pinkish gray is tough.

2. Cut into 3-inch pieces or desired length to fit into your jars.

3. Wash very well with cold water.

4. Bring 6 cups of white pickling vinegar and 1/2 cup of pickling salt to a rolling boil.

5. Add asparagus and cover with lid. Bring back to a boil.

7. Drain and let cool. You can spread them out a bit to help cool off faster.

8. Place the asparagus on a large tea towel or tablecloth, fold in half and place a tray / bowl with weight on top. This is to remove excess vinegar / liquid. Leave for two hours.

9. Place asparagus in a large bowl and add 1 cup of olive oil and mix well to ensure all the asparagus gets coated in oil.

10. Add 1 tablespoon of oregano and 3 large cloves of garlic minced.
